Tastes Like Summer

I’m not really sure what could say summer more than this. Maybe some hamburgers on the grill and a couple Coronas, but really? This is much better.
A few weeks ago I saw Jenna’s recipe for zucchini pizza and thought, Hey, I could make that. And then I remembered I didn’t have pizza dough or ricotta.
So I improvised. That’s tip No. 1: Know when to trust your instincts.
First, I grated a zucchini. It’s a lot easier than it sounds. Thank goodness for squishy flesh. (That’s as opposed to Parmesan, not some other flesh. Eeew.)

Then I patted the zucchini dry because that’s what Jenna said to do and she’s all schooled in food and all. That’s tip No. 2: Know when to trust people smarter than you.

Next, I smeared goat cheese all over a corn tortilla. Yes, I’m still obsessing about goat cheese.

Mound the zucchini on top of the goat cheese. Be generous. No one likes a stingy chef.

And top with salt, pepper, and mozzarella. You can use real mozzarella—which I did the first time—but if you’re out, don’t sweat it. Disclaimer: You can also add onions or garlic or whatever. If you like that gross sorta thing.

Bake in the oven at 375 degrees until the cheese is bubbly.

Cut into quarters because you’re six still.
And enjoy.

And yes, you are smart to pat down that zucchini that stuff is like 95% water. Soggy pizza is not bueno!

I love using the corn tortillas! Great idea. Does the man eat this? Because my boyfriend would get take out if I fed him goat cheese.

I’m shocked to be saying this, but yes. The Man eats this. Oh happy day. (He also dips it in barbecue sauce, which I can’t confirm as either delicious or disgusting.)

For such a simple recipe, that looks like something that would be on the cover of a foodie magazine or something. I’m always looking for ways to sneak veggies on my pizza (I always resort to plain old sauce + cheese), so the grated route might be the way to go!

I like sliced zucchini on pizza–so good. I think it’d be good grated, too–as long as it’s not on a tortilla. For some reason, the addition of sauce on a tortilla grosses me out.

I need to acquire some more zuchinni. That looks like perfection.
There’s no doubt in my mind that zuchinni can pretty much go into anything- have you ever had zuchinni bread? Insane.

I could eat an entire village’s worth of zucchini bread. Which is why I don’t bake it.

I had a tortilla this morning and cut it in quarters using my pizza cutter. It wasn’t even pizza so I really have no excuse. I just like things neat and orderly I guess!

I read zuchinni pizza and thought, “I don’t know.” But seriously? That looks surprisingly good! Mama may have to go back to the store.

Yeah, I shouldn’t say pizza. I’m not sure how I’d feel about shredded zucchini over sauce on a tortilla.

Nice job…I’m obsessing over goat cheese too (and not sure how a serving is only 30 g….I have triple that included in an afternoon snack…I’m a bit of an overdoser on dairy).
